Bruschetta with Crostini + Basil Gin Spritzer

Bruschetta with Crostini
4 cups chopped tomatoes
2-3 tablespoons chopped fresh basil
2 tablespoons chopped fresh cilantro
1 clove minced garlic
2 tablespoons olive oil
2 tablespoon reduced balsamic vinegar
2-3 chopped green onions
Salt and pepper
French baguette

To reduce the balsamic vinegar, bring it to a boil in a sauce pan and simmer for a minute until thickened. Let cool.

Dice tomatoes, removing most of the seeds and unwanted insides. Chop basil and cilantro. Mix all ingredients together in a dish. Set at room temperature for 1-2 hours to allow flavor to develop.

Slice bread. Line a baking sheet with foil. Brush both sides of the bread with olive oil. For extra flavor, season with either salt and pepper, or a seasoning salt such as Mrs. Dash. Broil until crisp and golden brown. Flip breads and broil opposite side until crisp and golden brown.

Basil Gin Spritzer
1 oz gin
1 oz basil simple syrup
½ cup tonic water
Limes (juiced and reserved one to cut for garnish)
Basil leaves

In advance, make basil simple syrup by combining equal amounts of sugar and water. Add a handful of clean basil leaves to the pot. Over medium heat, bring to a boil while you stir to dissolve the sugar. Lower the heat and simmer for at least 15 minutes on low heat. Remove from heat and let cool. Using a fine strainer, pour the mixture into an airtight container, removing the basil leaves. Store in refrigerator. 

Mix gin, basil simple syrup and a splash of lime juice. Add ice and tonic water. Garnish with basil leaves and a lime wedge.
